Our Story

Jewish delis were closing. Our grandparents were getting too old to cook. Ashkenazi cuisine was perceived as a thing of the past, if perceived as a cuisine at all. We were friends in the food world and we heard the call. It felt like something big was at stake. It all started with a manifesto and we've never looked back.

Carp in Bathtub Hat!

We draw inspiration from our culinary heritage. Families used to keep fresh fish in their tubs in the NYC tenements to make the freshest possible gefilte fish. In fact, The Carp in the Bathtub is among our most cherished children’s books.

Gefilte Fish Hub

Gefilte Fish is in many ways our muse. The polarizing dish was a symbol of all that went wrong with Asheknazi cuisine, and yet, what was possible. We made a guide for you!!

Pickles reveal the wisdom of Ashkenazi Jewish food. We teach workshops around the world and now we’ve put together an online guide to sour, half-sours, kraut, and more!
